Day 2 – 40 days of Happy
Having normal coffee with apple and almond butter as I am on the run this morning, I am also having some fermented foods, 2 teaspoons of sauerkraut, so good food you, will talk later about it. Have a good day. Feeling the benefits already of no sugar or wheat, my bloating has gone down and I feel more energetic, but there is no denying that yesterday was tough and I feel this afternoon might be too… here at my stall this morning, ready to feed the hungry!!
Day 2 lunch is vegan sausage wrapped in gluten free wrap with a little red rice salad and sauerkraut which grated carrot, just a teaspoon of humus and a black coffee.
Delicious recipe for red rice salad:
Bring rice to the boil and cook for 20 minutes and drain, add puy lentils (boil and drain for 20 minutes) add some almond flakes, fresh parsley, olive oil, white wine vinegar and garlic. Delicious!
Dinner was red quinoa with some roasted veg, again getting some naturals sugars to avoid the cravings. Afternoon was good, no headaches, no withdrawals. Good day. How are you all getting on? It’s not as bad as I thought. Feel a green smoothie will be breakfast, lots of green for fiber, protein and energy. Busy week -end ahead. Night all
