40 days of Happy Day 8
This mornings breakfast was porridge with almond butter, a little almond milk, lots of berries and bananas, Followed by a cup of green tea. Love Green tea, great for digestion.
Lunch was red quinoa (pack from aldi already cooked) with beetroot (raw and cooked grated) and lots of greens (kale, spinach, rocket) with mustard dressing (2 tbsp olive oil, 1 tbsp of white wine vinegar, 1 tsp of English mustard, 1 tsp of grated garlic, salt and pepper), I put this delicious combo onto rice crackers to feel full
Dinner, is butternut soup, as I am working, need to grab something on the go. Cut butternut into chunks, leave the skin on, sprinkle some smoked paprika and garlic powder on, with some salt and pepper and roast in oven for 30 minutes, when cooked, put in blender and add a little hot water and veg stock cube (gluten free), adjust with seasoning. It’s really filling
I have also decided to eat between the hours of 12pm and 8pm, which means fasting for 16 hours, after reading a few reports on fasting, I am going to see how my body reacts to it, last night I had the best nights sleep.
